Proof and Wood Pot Still Rum 2/3 750 ml

Proof and Wood is an independent bottler from Bardstown, Kentucky, and its '2/3' Pot Still Rum is one of the more unusual bottlings in its Curated Collection. This pot-distilled Jamaican rum spent two years aging in ex-bourbon barrels in Jamaica, then crossed to Kentucky for three more years in ex-rye barrels. That's where the name comes from: two years in the tropics, three in bourbon country.

According to the importer, it opens with hay and vanilla-softened esters, then moves to a palate of English Breakfast tea, toasted cinnamon and clove, with a hint of dried strawberry on the finish. Bottled at 54% ABV, it has the funk you'd expect from Jamaican pot still rum, rounded out by American whiskey casks. Only three barrels went into this release, so supply is very limited.
