Viva Mexico Blanco Madera 750ml

Viva Mexico comes from the Vivanco family's Destilería el Ranchito in Arandas, in the Los Altos Highlands of Jalisco, with Maestro Tequilero Sergio Cruz. Blanco Madera is a limited release bottled at a high 108 proof, and it is named for the wooden pine vats where it ferments.

Estate-grown Blue Weber agave, matured six to eight years, is roasted in brick ovens for about 48 hours. The milled agave and its fibers ferment for eight days in open-air 2,000-liter pine tinas with wild yeast and deep well water, while classical music plays to the vats (the distillery's "sonic harmonization"). It is then distilled twice in copper pot stills. Look for fresh agave, citrus, lychee, jackfruit, dry grass and wood, with raw and cooked agave on the palate. VinePair rated it 92 points.
