Description
Viva Mexico Tahona Blanco comes from the Vivanco family's Destilería El Ranchito (NOM 1414) in Arandas, in the Jalisco highlands. It is made from 100% estate-grown blue Weber agave matured six to eight years, and is the family's first commercial release using a newly built volcanic-stone tahona at their historic facility.
The agave roasts for 34 hours in a masonry oven and rests another 24, then is crushed by tahona, open-air fermented for about eight days in wooden tanks with wild yeast (to music, the family's "Mozart method"), and twice distilled in copper pot stills. It is bottled at 96 proof with no additives. The importer's notes run from white flower, pear skin and cinnamon to yellow apple, strawberry and tangerine, with mint, peach, black licorice and eucalyptus on the palate.
