Description
Tequila Ocho was founded by third-generation tequilero Carlos Camarena and the late Tomas Estes around a simple idea: agave tastes of the place it grows. Each batch is made from a single estate's agave harvest and labeled with its vintage, so every release reflects one field in the Los Altos highlands of Jalisco.
The process is traditional. Piñas are slow-roasted in brick ovens for 48 hours, crushed with a roller mill, fermented for about 100 hours in wooden vats with wild airborne yeast, then double distilled with the second run in small copper pot stills. The Plata is bottled unaged at 40% ABV.
Expect crisp cooked agave up front with bright citrus, white pepper, fresh grass and a mineral edge, leading into a long, clean finish. It is a benchmark blanco for sipping neat or building a margarita that tastes like agave.
