Description
Sotol is the traditional spirit of Chihuahua, distilled from the desert spoon plant rather than agave. Sol2Noches makes theirs from wild Dasylirion leiophyllum harvested in the Coyame Desert at 18 to 22 years of age, and bottles it at 46% ABV as an unaged blanco.
Production is led by master sotolero Don Gerardo Ruelas. The hearts are cooked in shallow earthen pits fired with willow and oak, open-air fermented for five to seven days in pine wood tinas, and distilled twice in traditional copper pot stills.
The nose opens with lemongrass, Meyer lemon, fresh oak and wet soil. On the palate, wet clay and cacao meet ripe fruit, delicate char, minerality and sweet spice. Sip it neat to appreciate its desert character, or swap it in for mezcal in a Paloma or Negroni.
