Ohishi Port Cask 750 ml

Ohishi Distillery works in Mizukami, in Japan's Kumamoto Prefecture, and its whisky is fermented with koji. The Port Cask started as a test batch that turned out well enough to bottle.

Fermentation begins with white koji and runs 21 days: seven days in clay pots, then fourteen in stainless steel. The spirit is distilled in stainless steel pot stills and matured for five to six years in Oloroso sherry and brandy casks, then finished for one to two years in port casks. The importer's notes describe crème brûlée, milk chocolate, toasted almond and vanilla, lifted by raspberry, key lime, ginger, licorice and ume (Japanese plum), with a lush, creamy texture.
