Southern Star Paragon Bottled in Bond 750 ml

Southern Star is the flagship whiskey line of Southern Distilling Company in Statesville, North Carolina, founded in 2013 by Pete and Vienna Barger. The distillery works from a 20-acre campus and manages more than 65,000 barrels.

Paragon is Southern Star's wheated bourbon, and this Bottled-in-Bond edition follows the federal rules: the product of one distilling season at one distillery, aged at least four years in a bonded warehouse and bottled at 100 proof. The mash bill is 70% corn, 16% wheat and 14% malted barley. Breaking Bourbon found confectioners' sugar, glazed bread and summer fruit on the nose, peach bread, white pepper, vanilla bean and oak on the palate, and a finish of cinnamon, leather and caramel. A friendly, approachable pour and a good introduction to North Carolina bourbon.
