Description
Los Ocotales Tobala is a joven mezcal made by maestro mezcalero Adolfo Santiago and his family in San Dionisio Ocotepec, Oaxaca, from tobala agave (Agave potatorum). It is bottled unaged at batch strength, which varies from lot to lot.
The agave is roasted in an underground pit oven, crushed with a tahona, fermented in pine wood tanks and double distilled in copper alembic stills.
Sip it neat at room temperature, ideally from a copita. 750 mL.
