Description

La Higuera Dasylirion Leiophyllum is an unaged joven sotol from Aldama, Chihuahua, made by third-generation sotolero Gerardo Ruelas Hernandez. The plants are cooked in an outdoor conical oven, milled by hand with axes, fermented with wild yeasts in pine vats and double distilled in copper alembic stills.

The producer notes wet soil and ash on the nose, a savory palate with cured-meat character and a fruity finish of peach and banana.

Sip it neat from a copita at cellar temperature. 750 mL.
