Castle & Key Restoration Straight Rye Whiskey 750 ml

Castle & Key Distillery brought the historic Old Taylor distillery in Frankfort, Kentucky back to life, laying down its first barrels in 2016. Restoration Rye was the distillery's first whiskey release, and it remains a flagship of its revival.

It is made from a sweet mash of 63% rye, 17% yellow corn and 20% malted barley, fermented with water from the property's historic key-shaped limestone spring, then aged in new charred American oak and bottled without chill filtration. The nose shows vanilla wafer, dried apple and candied orange framed by nutmeg and walnut. The palate brings cinnamon roll, brown sugar, peanut brittle and allspice, finishing with pie crust, vanilla and black pepper.

Released in batches, it is an excellent rye for sipping neat and makes a standout Manhattan or Sazerac.
